Baked Banana Fritters – Vegan Recipes
Simple, quick and easy vegan banana fritters, wrapped and baked in crisp filo pasty. So tasty!

Ingredients
3 Sheets ready made filo pastry (Theos is vegan)
2 Bananas
Dairy free butter
Granulated sugar
Cinnamon
Method
- Preheat the oven to 200°c (180°c fan). Slice the bananas into four, once down the middle and then the two halves in half again.
2. Melt the butter in the microwave or on a stove in a saucepan. Stack the three sheets of filo one on top of the other and cut into eight equal slices.
3. Place one of the banana slices in the centre of the pastry square, folding the two ends in and brushing melted butter so the pastry sticks when folded.
4. Once all the banana slices are wrapped in the filo, transfer them onto a baking tray lined with baking parchment so that they don’t stick.
5. Brush the parcels with the melted butter and sprinkle over the sugar and cinnamon (leave out the cinnamon if you don’t like it and change it to something tasty!)
6. Bake them in the centre of the oven for 20 minutes until the pastry is cooked through and crispy.
7. Drizzle over some agave nectar or a vegan friendly syrup for a sweet glaze.
8. Dig in! Be careful, the bananas will be hot!
