Fancy Mushrooms on Toast – Vegan Recipes
A simple twist on a breakfast classic, swap a few simple ingredients for extra fancy mushrooms on toast, flavoured with parsley. It’s also extremely quick and easy to make! (Serves 1)
- Prep time: 2 mins
- Cooking time: 5-6 mins
Ingredients
- A handful of wild mushrooms (I used Enoki, Shiitake and Oyster).
- One white English muffin
- Vegan sour cream
- Fresh parsley
- Sea salt
- Pepper
- Olive oil or dairy free butter
Method
- Rinse the mushrooms in a colander and chop any larger mushrooms into smaller pieces.
- Heat a teaspoon of olive oil or dairy free butter in a pan over a medium heat.
- Once the oil is hot, put the mushrooms into the pan.
- Season the mushrooms generously with sea salt, pepper and fresh parsley – I often buy frozen herbs and spices as they are easy to store and last much longer than fresh herbs.
- Toast the English muffins for a few minutes until they are warm and toasted.
- Spread the sour cream over the warm muffins and top with the mushrooms.
