Fancy Mushrooms on Toast – Vegan Recipes

A simple twist on a breakfast classic, swap a few simple ingredients for extra fancy mushrooms on toast, flavoured with parsley. It’s also extremely quick and easy to make! (Serves 1)

  • Prep time: 2 mins
  • Cooking time: 5-6 mins

Ingredients

  • A handful of wild mushrooms (I used Enoki, Shiitake and Oyster).
  • One white English muffin
  • Vegan sour cream
  • Fresh parsley
  • Sea salt
  • Pepper
  • Olive oil or dairy free butter

Method

  1. Rinse the mushrooms in a colander and chop any larger mushrooms into smaller pieces.
  2. Heat a teaspoon of olive oil or dairy free butter in a pan over a medium heat.
  3. Once the oil is hot, put the mushrooms into the pan.Mushrooms on toast
  4. Season the mushrooms generously with sea salt, pepper and fresh parsley – I often buy frozen herbs and spices as they are easy to store and last much longer than fresh herbs.
  5. Toast the English muffins for a few minutes until they are warm and toasted.
  6. Spread the sour cream over the warm muffins and top with the mushrooms.
